The word tapas comes from the Spanish verb 'tapar' (which means to cover)

A tapa was meant as a free snack to be placed on top of a drink to keep flies away. Going out for tapas implies ordering a plate of food called a ración, if it is to be shared among a few people, or a 1/2 ración if alone or two. Also common in tapas bars and restaurants are bocadillos (or bocatas) which are sandwiches made with a bread roll or baguette.

One of oldest and most popular tapas bars in Madrid is "La Casa del Abuelo" located in calle Victoria 12 (between Sol and plaza Santa Ana) specialities of the house are grilled and garlich shrimps served with red sweet wine. Delicious!
